Nick's Cordon Bleu

Marinate Pheasant Breast in an olive oil & spice rub for about 1 to 3 days
(make a paste of lemon pepper, sage, salt, garlic powder & thyme)

Par bake at 375 degrees for 7 min, then take out of the oven.
Layer the following on top of each breast.
1 oz ham, 2 slices of tomato  2 wedges of avacado , top with
2 slices of swiss cheese .
Cook in oven for about 10 - 15 min or until internal temp reaches 165 degrees
